Besan is a flour made from ground chickpeas, a legume otherwise known as chana dal. It is also known as chickpea flour, garbanzo flour, or Gram flour. Used in many countries, it is a staple ingredient in Nepali cuisines. It is great to coat vegetables for pyazi ,pakoras or to make flatbreads. It is pale yellow and powdery and has an earthy flavour best suited to savoury dishes. Besan contains no gluten. It is widely used in Nepali cookery.
